Most direct injection petrol cars start at higher idle around 1500 rpm form cold start. This is to compensate for combustion mixture being too lean with cold fuel presumably so fuelling injection is increased at start up and throttle opened more=more revs to increase air intake to match fuel quantity richer mix until optimum temperatures are reached. All of this takes around 30odd seconds when revs drop back to 750rpm normal idle. The whole process is programmed into the ECU. When engine is warm it starts at normal idle speed. As the cold start revs higher, the turbo spins a bit faster and either the wastegate chatters or the bearings rattle until oil is upto temperature and circulating in the turbo shaft optimally. This is why the 2.0s sound like a spitfire when cold started. Put your finger on the wastegate actuator rod and you can feel the vibration, push on it and you can hear the noise reduce slightly.
My old 2.2jts 159 used to rev higher on cold starts but without turbo it did not rattle like a spitfire. This is normal behaviour for the engine by design. Don't think the OPs problem has anything to do with this. I normally allow the engine revs to settle before driving off whenever I can that is. Also after spirited driving I let the engine idle for a few seconds to allow turbo to settle down especially for oil circulation, before shutting down. Well, that's my understanding of it anyway.
